Turkey Fillets with Plum sauce

Serves 4 Ingredients Method

4 medium turkey fillets, skinned and flattened

1-2 eggs, beaten

2oz of wholemeal flour

3-4oz of fresh wholemeal breadcrumbs

1 tblsp of freshly chopped thyme

2-4 tblsp of olive or soya oil SAUCE:

80z of fresh plums, halved and stoned

1⁄4 oz of fresh ginger, peeled and crushed

2oz unrefined sugar to taste

3 tblsp port

Garnish: A few sprigs of thyme A twist of lemon

Dip the turkey in the egg and then the flour. Re- dip into the egg. Mix the breadcrumbs and thyme together and coat each fillet with breadcrumbs. Heat the oil in a shallow pan and fry for 6 minutes each side until cooked and golden brown. Meanwhile, mix all the sauce ingredients together in a pan and bring to the boil. Reduce the heat and simmer until thick. Garnish the turkey with thyme and lemon and serve the sauce separately.
