Asparagus with Orange Yogurt

Serves 4 Ingrediens Method

1lb of asparagus

1/3 of a pint of natural yogurt

2 egg yolks

1 clove of garlic- crushed Salt and freshly ground black pepper

Finely grated orange rind

1⁄2 a large orange

1 tblsp of finely chopped dill

Cook asparagus, drain and keep warm. Meanwhile, beat the yogurt and egg yolks in a heatproof bowl. Add the garlic, salt and pepper to taste, orange rind and dill. Stir over a pan of gently simmering water until thesauce is warmed through. Serve immediately, poured over the asparagus.
