Raspberry Cheese salad

10oz curd cheese 1 tblsp of chopped chives 1 clove of garlic, crushed Salt & freshly ground black pepper 12oz of fresh raspberries Juice of 1 orange lettuce leaves peeled segments of 2 large oranges 2 heads of chicory, quartered lengthways 1⁄2 a cucumber, halved, seeded & cut into strips Fresh mint or basil to garnish. |
Mix the curd cheese with the chives, garlic and salt and pepper to taste. Press the cheese mixture into 4 small lightly greased moulds and chill for one hour. Put two thirds of the raspberries into the liquidiser or food processor with the orange juice and blend until smooth. If too thick, add a little water. Arrange a bed of lettuce leaves on a salad platter. Arrange the orange segments, chicory and cucumber on top. Carefully unmould the set cheeses on top of the salad and spoon over some raspberry puree (keep the remainder to serve separately). Garnish with the reserved whole raspberries and mint or basil. |
