Raspberry Yogurt Fool

Serves 3-4 Ingredients Method

1⁄2 lb of fresh raspberries

3-4oz of caster sugar

1⁄2 pint of natural yogurt.

Wash and drain the raspberries. Put the fruit into a bowl with the caster sugar and mash until soft and pulpy, either with a wooden spoon or a potato masher . (The fruit can be liquidised but this gives a less attractive texture). Stir the natural yogurt into the pulped raspberries and pour into a glass bowl. Chill for 2-3 hours. Serve with sponge fingers or ice-cream wafers.
