Baked Apricots

Serves 4 Ingredients Method
1 lb of apricots

Soft brown sugar

6 tblsp white wine or cider

Nick the skins at the stalk end of the apricots. Plunge them into boiling water for 30-45 seconds, then peel off the skins. Put the apricots into a shallow, oven-proof dish and dredge evenly with granulated or soft brown sugar. Add the white wine or cider, cover the dish and bake in moderately hot oven for 40-45 minutes until just tender. Serve warm, or chilled with cream.
