Ratatouille

Serves 4 Ingredients Method

1 onion, thinly sliced

8 tblsp of oil

1 green pepper, deseeded and cut into strips

1 small or 1⁄2 a large aubergine, sliced

4 large tomatoes, roughly chopped

Salt and pepper to taste

One clove of crushed garlic

Fry the onion gently in 4 tblsp of oil until it starts to soften. Add the red peppers, aubergine and tomatoes. Add a further 4 tblsp of oil, salt and pepper to taste and one clove of crushed garlic. Cover and simmer gently until the vegetables are just tender. This can be served hot or cold.
