Chicken Munch & Crunch

Half lb. cooked chicken, plain or smoked, cut into strips 3 Desert apples, peeled, cut into quarters & sliced 2 Avocados, peeled, halved & stoned 2 Oranges, peeled & segmented 1 Grapefruit, peeled & segmented 1 Iceberg lettuce or head of Chinese leaves Juice of 2 lemons Yoghurt dressing 5oz Carton plain yogurt 2-3 tblsps freshly squeezed orange juice Quarter tsp french mustard Salt & pepper to taste 1 tblsp Chopped mint |
Arrange the washed lettuce or Chinese Leaves on a flat platter. Marinate the apple slices in the juice of 2 lemons. Mix the chicken with the avocado, orange and grapefruit segments. Place on top of the lettuce. Arrange the apple slices decoratively around the chicken. To make the yogurt dressing: mix all the ingredients together and spoon over the salad. |
Apple Cake

4oz Butter 4oz Soft brown sugar Grated rind of 1 lemon 1 Egg 8oz Plain flour 1 & half tsp baking powder Half a cooking apple, peeled, cored & coarsely grated |
Cream the butter with the brown sugar and grated lemon rind. Beat in egg. Sieve together the plain flour, baking powder and cooking apples and fold into the mixture. Divide between 2 greased 7” sandwich tins, spreading the surface level. Bake at 375º f, 180º c, gas mark 4, for 40-45 mins. Turn out onto a wire rack. Allow to cool, sandwich together with lemon curd and dust the top with icing sugar. |
Baked Savoury Apples

Core the apples, slightly hollowing the centres. Place into a baking dish and make up half a packet of stuffing mixture according to packet instructions. Mix with egg yolk and one of the above. Season to taste and spoon into the centres of the apples. Spoon over a little melted butter and bake in the oven at 375ºF or gas mark 5 for about 40 minutes until apples are tender. |
