Sharon Fruit and Smoked Chicken

2 Sharon Fruit 3 tblsp of olive oil 2 tblsp of white wine vinegar 1 tblsp of chopped chives Salt and freshly ground black pepper 1/2lb of smoked chicken, cut into strips 1 small, crisp lettuce, such as Cos 2oz of Feta cheese, coarsely crumbled. |
Cut the top off each Sharon fruit and scoop out the pulp. Slice the outer shells into thin strips. Mix the Sharon fruit pulp with the olive oil, vinegar, chives and salt and pepper to taste. Arrange the strips chicken and Sharon fruit on a bed of lettuce leaves and scatter the feta cheese over the top. Thin the Sharon fruit dressing to the desired consistency with a little lemon juice, orange juice of dry white wine. Spoon over the salad and serve immediately. Ideal either as a light lunch or supper. |
